The 10 minute Healthy Sweet Potato

Lets Make something good a lil sweet but most of all healthy.

This is another one of my go to meals on days that I just do not feel like something so heavy or, when I don't feel like doing much in the kitchen. 

  • 2 medium sweet potatoes
  • Olive Oil (Optional- Rub on the skin before placing in the microwave)
  • Cinnamon
  • Pepper
  • non salted butter

Sweet potatoes are a great source of beta-carotene, a powerful antioxidant that gives orange fruits and vegetables their vibrant color. Beta-carotene is converted to vitamin A in the body. Consuming foods rich in beta-carotene may reduce the risk of developing certain types of cancer, offer protection against asthma and heart disease, and delay aging and body degeneration.

Keep the skin on! The color of sweet potato skin can vary from white to yellow and purple to brown but, no matter what color it is, make sure you do not peel it off. A sweet potatoes skin contributes significant amounts of fiber, potassium, and quercetin.


 After preparation and cooking I then split the sweet potato into fours depending on the size sprinkle a small amount of black pepper and eat. Of course I don't need to tell you all that you can  add this to other sides you choose, but honestly this is the perfect food for those of us that are not consuming meat for a few days.
